So far the only Maria Hopkins I can find is
born 09/10/1851 and baptised 03/07/1853 along with sister Emma in St Giles Camberwell
parents Richard a horse keeper and mother Charlotte, cannot find another one that fits so far
This one does not fit in with age on 1871

Louisa  Maud.  Her father was definitely John Hopkins

What age was given for Maria on her marriage in 1870, and what was the date of the marriage?

If as you say her father  was  John have you found her on 1861 at  home with her parents,

No I cannot find Maria on 1861 census. I only know her Father's name from her marriage cert. Mothers name still unknown.

Full age 1870?, that was 21, census 1871 states she is 18, something doesn't add up, 1870 minus 21 is 1849, therefore born circa 1850 then

Ages given on the census's vary a lot the earliest date for Maria's birth is possibly 1851, the latest 1857, with two indicating 1853. I had chosen 1855 as a mid, not definite date.
No sign of Maria in 1861 census with father John and other family. By 1891 Maria was with Richard Stapleton, and several children.
Without a mother's name I haven't been able to trace parents marriage, Maria's birth reg. and any siblings.
She is my 3rd great grandmother, my line going down through her first daughter by Adolphus Cox (Cock)

I knew the name Stapleton rang a bell, her daughter married 25/12/1895 All Saint's Rotherhithe 
Amelia Cox aged 22 father Adolphus Cox
married
Henry Chamberlain  aged 25 father Henry
witnesses were Richard Stapleton and M E Cox, assume that was her sister

I have looked for Maria/Marie with father John to no avail, it is a pity her dates from census to census differ

There are a couple of workhouse admissions for a Maria Stapleton in Southwark in 1919.
