I thought I'd have a go myself first but so far nothing has turned up so here we go:
William John(s) PHILLIPS born 1829 St Mewan Cornwall ,parents William and ANN nee JOHNS, married Mary Ann KENT 1856 St Austell Cornwall (witnessed by James Johns Phillips) is on the census in 1861 RG 9/1835 fo51 p3 ...James is with them. Then nothing no BMDS or censuses nothing. James we know married in 1864 then left for Australia in 1865
Did William also go to Australia?
[sorry if I seem distracted I am having a vitrectomy eye surgery on Wednesday and am already shaking!]

Update
I have now followed William Johns PHILLIPS and his wife Mary Ann up they remained in Cornwall bur the censuses have all given birth years consistantly  2 years out
