It is a confusing situation as William REYNOLDS m. Mary Jane WHITE c. 1890 (from dob of daughter Margaret Mary)
William died 1896
Around the same time his sister Mary Anne REYNOLDS married John GALLAGHER 16 Feb 1896
The Catholic Church of the Holy Name, Chorlton, Lancs. UK.
Mary Ann and John GALLAGHER had 5 known children b. c1897/1899/1901/1903/1904.
Mary Ann GALLAGHER nee REYNOLDS died 01 Nov 1906.
So now Mary Jane REYNOLDS nee WHITE is a widow & John GALLAGHER is a widower.
They are married 08 Jun 1907 Church of the Holy Name (Catholic), Chorlton, Lancs. UK.
There are census records showing these people together at various times.
No I haven't found William, Sarah or Mary Anne on 1871 census or on 1881.
The words you use lead me to think you may have some details unknown to me ie "born Ireland came to L/shire in 1860's and 'adopted' an English birth place".
I would be delighted if you are able to shed any further light on this mysterious family.
As far as Mary Jane WHITE's family - that also was confusing, but I am getting there
