Thank you. As I understand it, this just means that Anna was over 21 rather than being specific?

He was 36 and over, she was 21 and over meaning they had had that birthday, she did not need parental consent and their next birthdays would be 37 and 22.

A 'Marriage Bonds & Allegations' entry for Henry Philipps Sauer and Catherine Margaret Weesel on 20 Dec 1752.

Henry from the Parish of St Martins in the Fields, Westminster and Margaret from St James'. He being aged 24 and she 34. Marriage proposed to take place in the Parish Church of St James or the German Chapel in the Parish of St James.

Potential parents to Anna Louisa and possibly Dorothea Elizabeth?

Yes excellent. Undoubtedly Henry, and probably Catherine judging by her name, were of German descent from immigrants and had retained their church allegiance, perhaps as members of a German community in Westminster. When Anna's husband, who was French died in 1793, she had him buried in the German Chapel at the Savoy.
They had no children but I know nothing of her further life, except that she was considered destitute by 1795, so his former colleagues published his collected works on veterinary medicine with all profits to go to her. The Veterinary College had awarded her an annual sum, but apparently withdrew it when college finances collapsed.

In her late 30s/40s likely when this was going on towards the end of the 1700s. As you say, wonder what became of her  :-\
