Family History Beginners Board / British regiments - How to search for births etc

I have identified through family oral history and England census records that my great great grandmother was born in Auckland NZ in 1868 and here brothers in India, one in Ferozopore. Her father was in the British Regiments
I have access to regimental paylists in NZ , but would appreciate guidance of the best way to approach analysising the army records and what sections I should specifically be looking for.
eg when the regiments moved were there lists of soldiers and dependents?
if births happened where would they be recorded ?
similarly for marriages?
paylists are an obvious starter but are there other lists I should be looking for ?
etc
From NZ history , timings etc I think I can narrow down to the 18th Royal Irish ( Paddys Blackguards )
appreciate any pointers
