This could be your William in 1861.

270 Stolecross St., Glasgow Barony, Lanarkshire, Scotland
William Hockinson, age 33, Lodger, Potter, born England.

Head is a John Murray, with a few other lodgers.
Right age and occupation, close to the right name. This is from Ancestry which only has transcriptions of the Scotland census, and doesn't say if he's married or not. Someone with a subscription with Scotlandspeople may be able to tell you if this is a true transcription. Can't see a better match in England in 61.

The Internet Archive has about 30 sets of Yorkshire Parish registers free to view or download. Go to www.archive.org and search for Yorkshire Parish Registers. Transcribed at the end of the 19th century by the Yorkshire Parish Register Society. Put on the net in the last month or so by the University of Toronto. Hopefuly its a work in progress. You can't tell from the volume number which parishes they cover, so I listed them. They are big files.

This may be them (minus William) in Scotland in 1861.

Elizabeth Ross, Head, 48, Washerwoman, b. Alford, Aberdeenshire.
Mary Hodgkinson, Daughter, 24, b. Aberdeen
Thomas Hodgkinson, Grandson, 4, b. England
Elizabeth Hodgkinson, Granddaughter, 2, b. England.

I know this Mary is down as born Aberdeen, not born Newcastle as she is in 1871 census, but the rest seems to fit.
James and Mary have a son Thomas aged 14 with them in 1871. No Elizabeth in 1871, but there is a death of an Elizabeth Ross Hodgkinson, aged 8, in Newcastle in June qtr 1867.

Marriage in South Shields 27/7/1889 : William King and Mary Walker.

Don't know why he's down as Matthew in 1891, and William in 1901 and on 1889 marriage cert., but it really doesn't look like this is the same William who was married to Isabella Spoor.

The IGI has a William Patterson, son of George Patterson and Hannah Notman, born 9 Jan 1811, baptised 19 May 1811 in Heworth, Co. Durham.
Would need to check the original records to confirm as the IGI can be unreliable.
