Lancashire / Tracing seafaring ancestors

The most likely candidate for my great grandfather is John Burns, aged 31, ship’s cook who was on board the SS Bothnia in the 1881 census. (He’s also listed on the Scottish 1881 census under the name Jno Burns, again on the Bothnia 68094 Glasgow.). The Bothnia sailed regularly between Liverpool and USA.
However, both records show his year of birth as 1850 and birth place Liverpool. This makes him about 10 years older than expected. Either the census is wrong, or GGD lied about his age, or I have the wrong person.
On the TV series “Who do you think you are?” one participant traced his seafaring ancestry by means of a log book which listed the ships that his ancestor served on & the dates. Does anyone know how to access such records or can think of another way to prove or dis-prove John’s age?
