Looking through for some other stuff and came across your query - I have a possible answer. I think 'ystum' is nothing to do with burial records in general - and (given you are looking at Llanpumpsaint records) - more likely to be an abbreviation for 'Ystyngwili' - present day parish of Abergwili. This old parish went northwards to a border with Llanpumpsaint parish. So -I think your 'ystun(ystum?)' is more likely to be the location of the deceased. Hope this helps.
