Some data on John Henry may be wrong
1841 probably North Brentor; copper miner not coal miner
1851 Brentor not Breutor and NB they appear to be in Mary Tavy a mining community at the same time as William Metters (my line) Tapson not Flapson.
1861 William living in home of Emanuel Crocker whose wife interestingly was born in Mary Tavy (ther Crockers moved to Tavistock from South Tawton north of Okehampton after 1851

Looking again at the Census data
1841
1851, I read William (Mellors) as 56 (as does the transcript) Based on the 1861 this is probably wrong and should be 36 and but explains my original query. Margret's entry looks as though it has been changed or at least emphasised but seems to read as 39 William is recorded as born in Sourton and his wife in Tavistock, two children born in Lydford
1861, As I said below William (Matters) recorded as 61 and this is very clear, and born in Sourton. Margaret is less clear but could be 57 or (at a pinch 61 or 51)
It looks as though both ages are "fluid" and I cannot find any record for William or Margaret in 1871 but see below
In 1841 most Metters/Matters are recorded in Devon with hotspots in Tavistock, Holsworthy, and few in Okehampton. There are few in Cornwall but most are in Launceston. Sourton is v close to Okehampton and about 14 miles from Launceston and 20 from Holsworthy and 12 from Tavistock.

Agree 1841 shows 10 years younger and there is the issue of rounding

In 1861 they are recorded as Matters and still in Mary Tavy
William is recorded as 61 and wife as either 51 or 57. The original is unclear and the transcript says DOB 51. But it is the same family
By 1871 Mary Ann now Voisey with 2 children is recorded as the head of the house and living with her sisters in Mary Tavy. I cannot quickly find either her parents or her husband although it looks like her 1881 husband is living with one of her brothers in Cumberland, he appears to be 10 years younger than her and 15 or 16 when her son John was born.
In 1881 the Voisey family and Sarah were living in Haverigg in Concrete Sq built by the Hodbarrow Mine Co to house workers, most of my extended family, Metters, Wood, Crossman all lived in Concrete Sq at one time or another and there seems to be a constant swapping of relations lodging with them.
Looking at the 1841 and 1851 census data the main concentration of Metters/Matters etc in England is in Devon and in particular around Tavistock and a couple of other centres with outliers elsewhere in the west country and a few elsewhere.
My goal is the fill in some of the gaps but in the main to try and drive the ancestor dates back and in particualr to find if/when they came to England. Any help appreciated.

An aside really
I am descended from
William Metters born Lamerton about 1795 m to Margaret ? and in (in 1841) living in Mary Tavy
I have all the links down from there, family migration to Cumberland and on the America in the mid 20's. My line was forced to come back
It would be good if we could make links earlier than William and explain why Margaret his wife in 1841 was  17 years younger
