Hi, I think we may be looking for the same George Gray.  Elizabeth Gray who died in 1878 and is buried in WTC appears to be Maria Elizabeth (Lowen)as you have noted.  On her death record (SAGHS) her husband is named as JOHN GEORGE GRAY.  I think this is one of those cases where the Christian names were used alternately.  I have found the following death notice which I believe to be the same person.

GRAY - On the 31st August, at the residence of his son, Henry Gray, Close-street, North Unley, John George Gray, aged 76 years, leaving 5 sons and 1 daughter, 24 grandchildren, and 2 great-grand- children. A colonist of 50 years. Gone to a happier home.
Advertiser 2/9/1895. 
He is buried at WTC with the spelling of GREY,  Death certificate "John GREY" states he was a "carrier".

My great-grandfather was Thomas Henry Gray, on his marriage certificate his father is named as "John" (carrier) and in Trove Silver anniversary notice as 3rd son of late John G Gray of West Terrace. 
Birth registrations for the children of George and Maria show father as "George", however baptism of John George shows father as "John" and most of the marriage records for the children name the father as "John".
All just to confuse us I think!  Your thoughts on this would be welcomed.  I have quite a bit of info on the children and their descendants if you are interested.  Best regards Heather
