Lanarkshire / Family don't appear in any census

My Grandmother Betsy's family lived in Glasgow when she was born in 1909. Her mother, Helena McClafferty, was 26 when she was born illegitimately. I also have details to show that Helena's parents, James McClafferty and Annie (nee Dwyer) married in Glasgow in 1879. Helena's father (James) died in Glasgow in 1913. I have all this information, including their various addresses in the Gorbals and Anderston districts, but they do not show up in any census, not the 1881,1891, 1901, or 1911. How can they have somehow avoided all the censuses? I realise that unfortunately you cannot look up a census entry by street name, or I would do that.
I understand from my family that my Grandmother was subsequently adopted into the Mellon family, and on her birth certificate her name appears as Betsy Mellon McFarlane. How can I find out about her father, or the people who adopted her? Is it possible. Sorry for so many questions, but I seem to have hit a brick wall.
