Update to OP:
I have found out that Mary Jane died young as well. She passed on 15 June 1877. She and Henry are buried in Derry City Cemetery, section L-B, graves are unmarked. Thanks to the Derry City Cemetery Project for that info. So, the last verification I have for John or Mary is when John made his mark on Henry's death entry 25 Nov 1880 with an address of 36 Fahan Street. I still know nothing about them after that date.
Interestingly, I recently learned Fahan Street is pronounced "Fawn". I have been saying "Fay-Han".
