Have you read the will of Richard RUFFIN alias RUFFHEAD?

Dated  1863.

As far as I can see, Richard bequeathed nothing to his wife.
Bequests to son Joseph, son John niece Elizabeth Broadbent.

ADDING: FYI-
Niece Elizabeth was the wife of one of the executors in the will, George Adam Broadbent

We do have a "list" of Mariners / Seamen relating to New Zealand.
Have used before but can't find at present ???     Maybe someone else will be able to find it and post the link here.    ;D

We have this one of the same sort

https://marinersandships.com.au/search.htm

There are 4 possible sightings, 1880's but again, rather indefinite. ::)
Use “A J Edwards master” in the search.

So it does begin to look like just the one child to the couple.

when Jane EDWARDS died she had been living at 118 Corunna Rd, Stanmore. 1921
Death Notice.

This is the same address given for the residence of Mabel EDWARDS  at her death in 1937.

So perhaps a close family sharing their home with mother.

It is a little unusual that a single woman in her early 30's, pre 1877 would go to New Zealand unaccompanied and/or without clear purpose.
Some guaranteed income would be needed.

The travelling expense in itself, would be out of the reach of most women.

Scenarios might be-

Work of a specialised type (charity, nursing, educaton)
Marriage to someone living there as a definite and pre-arranged undertaking.
To live with and possibly assist a relative living there eg sister.
Rejection by her family for some reason

Just as a sideline of possible interest, This 1905 marriage notice for the son, Sydney, (which you have mentioned)  states he was the only son.  Late father of NZ
