Hampshire & Isle of Wight / Surnames different from census to census

I wonder if anyone can help with this:- My 3 x Great Grandfather and 3 x Great Grandmother appear from census to census with different surnames.
1841:Thomas Yeates b1811 Ag Labourer living Clanfield Catherington Horndean with wife Jane, sons Henry, Thomas and george
1851:Thomas Yates b1807 Clanfield Ag Labourer living Bunkershill Droxford Hambledon with Ann Holmes (my 3xggm), John Yates, Mary Yates, Charles Knight and James Yates (my 2 x ggf)
1861:Thomas Stepherds b1809 Clanfield Ag Lab living BunkersHAnmore (Anmarn) Catherington Horndean with Ann Stepherds, Mary Stepherds, Ellen Stepherds, Harriet Stepherds and Elizabeth Holmes
1871:Thomas Shepperd b1805 Clanfield Ag Lab living Denmead Farm Hambledon with Ann Holmes, James Holmes and Ellen Holmes
1881:Thomas Yates b1807 Clanfield Ag Lab living Anthill Droxford Hambledon with Ann Yates, Harriet Nash, William Nash and William Nash
I have James and Harriet's birth certificates - James Holmes says mother Ann Holmes no father, Harriet's says mother Ann Holmes father Thomas Yates
My question is I have no idea where the name Shepperds fits in.
Sorry it's such a long question but I thought you would need all the info.
