Ireland / What to do with Old Style Dates - Convert them?

This is something I ran into decades ago and put to one side.
Is there a standard way to deal with Julian calendar/Old Style (OS) dates?

I have a few such dates in my family tree. For consistency, I think they should be converted to Gregorian calendar/New Style?
Do people do that?
And on what level to convert - Just the  year, that is changing Jan/Feb/Mar to the next year, or convert the entire date, that is day. month and year, all of which could in general differ?

For example, the marriage of two of my direct  ancestors are on the same page as the 1835 baptism of your Mathew Myler.

That Michael and Elizabeth were married in Ballymore in 1862 suggests that she may have been from that parish. Ballymore registers go back to 1820s, so you may well be able to find her birth. But the first register was not filmed by NLI, and therefore is not online.

Actually, there is an excellent candidate for Elizabeth Furlong in the Lady's Island parish registers
Baptized ... December 1838, parents William Furlong and Anastasia Mythen, in Reedstown

The Christian names William and Anastasia match with Elizabeth and Mathew's  first daughter and second son, in good agreement with naming patterns

The Lady's Island parish registers go back to 1737, so it may be possible to trace further back - I would look for Sigginstown baptisms.

There is a candidate possibility for James in May 1809, but there are no details, just name Meylor and address!

Michael Meyler's death in 1930. His son Nicholas was the informant.
