 Not sure about this but...Wonder if they meant to write Railway Express Man?
   Looked after the transportation & safety of luggage, parcels & imports on trains. Sometimes even picking them up & even taking them to their destination addresses... Sounds rather like the express parcel post deliveries today.
  Adding...I see a young William if that is your man, in the 1911 census Blackpool, Fylde, Lancashire- a railway goods porter...which sounds similar in job terms but his later work being of more importance.

  If that is he, then click on the "link" in above census result as he's with a James Robb (half-brother?) in 1906 Melita (who is called a servant ) He says he immigrated 1889 & the lad the year the census was taken?

The patent he signed in 1901 was not the section of land he was farming in 1911

  (Margaret) Ruth & Gordon's obits can be found online... Here is a site with detail on her husband's life. Margaret had a brother in Mb. as well!!!
   Also the mention of Harvesters flocking to the grain-growing Provinces is likely Alexander Cook's story as well. He & his fellow passengers had probably either read the call for farm help needed in Canada at harvest time or the free land grants available here! (Unfortunately, the sad part of the story is that it had all been taken away from the aboriginal & metis population)

 Ack!  :P :-[ :-\ So sorry Rosie, I looked up at the previous reply & realized I'd credited the wrong person & modified it right away. ( Was certain it went through) I'll have to pay better attention but I'm getting older, not so much wiser!

 I don't think 1841 gave more info other than "Aberdeenshire" for anyone. George could be worth looking at as a brother to William, as the 2 families live in the same locale in 1851.  ( Even half an hr. away, walking, is a neighbour when you live on a farm)  Plus, looking at William's 1841 census there is a young Wm, perhaps his first son ( He later names another William with Margaret as well)
   William, b. betw. 1826 & 1828 is in the Smith households in 1851 & 1861, which, in 1841 was right next door to George's in 1841 "Kirkton"  Kirktown Of Bartle Chapel ( Barthol Chapel?)...( later called "Nether Kirktown" in 1851 where Wm. is a Servant/Farm Labourer age 19  & in 1861 Kirkton  William is a Servant/Cattleman 
Younger Wm. on 3 censuses...

He may also be in Kinnellar 1871 census as a Farm Servant & further afield for later ones...
adding:
Wondering if the abode George & Harriet were in may have been for working tenants/crofters to the Smiths.
There is a Tailor in there one census, and if they also spun wool or crofted fabric ..The Smiths also had one family member who was a merchant.

With some Thomas ancestors also naming sons Thomas, it made for some confusion. I have noted while searching for others...that it may also have confused those children when Momma called the father, or visa versa..so sometimes the father's middle names were used. Having said that, things can also be harder to prove, as sometimes actual forenames were used on important documents.
