Just wanted to run this by you, I searched the military records with extra info as 30 foot and 3 pension records came up for a Thomas Hubbard, 30th Foot, Leicester.

The date of admission in the WO 23 Royal Chelsea Hospital Chelsea Admission books is 3 Feb 1819 which is the same date firmly written on the military records you have; date of death is 3 Dec 1872.

There's a Blaby death that fits,  birth as 1791.

There is a report in the Leicester Journal 13 September 1895 and an inquest was held into his death after he collapsed in the street and died; he had been previously living at 22 Charnwood Road but his body was taken straight to the mortuary, a Mrs Noon had been walking with him and she saw him collapse as she turned round. The verdict was death by natural causes

As I understand it, the coroner would have signed the death certificate after the inquest.

I have found his burial at Welford Road, Frederick was buried 9 Sep and abode was given as the mortuary, I'll have a look at the records I have and see if there is any other record for you.

I did spot a Charlotte East born in Sheffield 1895, no MMN, then I think as adopted daughter with the Kirk family in Lincolnshire, it's a bit late and hope I have remembered it right, she is with Thomas Kirk and his wife

1901 Charlotte Kirk born Sheffield
1911 East adopted daughter

and later Lottie Kirk, in Lincolnshire.

I couldn't find a Joseph East birth, but did find Joseph Tear, the only East birth for a 'Joseph' born in Sheffield to Joseph and Caroline Tear, this Joseph being born 13th March 1898
