Essex Lookup Requests / COWLING - born Gt Wigborough 1804/5 cannot find parents

Help requested. Thomas Cowling was born 1804/5 in Great Wigborough. Census has confirmed that John Cowling born 1808/9 also born Great Wigborough is his brother.  Cannot find either in Gt Wigborough parish records.  I believe that spelling of this name varies a great deal from Collin to Cowland.
Thomas Cowling was a Farm Bailiff in 1841 in Althorne, and in Canewdon in 1851 & 1861 He died 1862. In 1881 his second wife Hannah has two of their grandsons living with her as Wheelwrights. Could this prove a link with the many Cowling Wheelwrights I have found in Essex?
John Cowling is ia Dealer? in Salcot 1841 & Carter? in Virley in 1851 then cannot find. His daughter Arubah/Azubah is with his brother Thomas in 1861.
As I have no idea where to look for baptism/Christening of Thomas & John to find a sibling not born in Gt Wigborough might be my only hope of finding the parents and getting back further.
Any help would be most appreciated.

Tried years to find death Amelia Taylor between 1861 & 1871. Only Herts death registered for an Amelia Taylor I have found is in the registration district of Bishop Stortford April to June quarter of 1864.   I would buy death certificate but I believe cost £10 now - too much if wrong Amelia.  If burial of this Amelia was found aged about 44 yrs, wife of Joseph Taylor, of Hitchin or daughter of George Curtis, I would buy certificate. Amelia's marriage certificate June 1847 Hitchin St Mary states full age of Bancroft Street father Geo Curtis (Farmer). 1841 census can not find Amelia then Curtis. 1851 - Cott's in yard 'Shoulder of Mutton' PH Back Street, Hitchin Amelia Taylor 30 yrs Wife, Charwoman, born N.K. (Husband in Hertford Gaol Amelia with another family who may not have known where born).  1861 - With husband Joseph in Seymours Alley, Hitchin Amelia Taylor 41 yrs Married Drovers Wife born Hitchin.    1871 census shows Joseph Taylor widowed, lodger at 'Shoulder of Mutton' Beer House & Lodging House, Back Street, Hitchin, Drover out of imploy. 1871 my gt gran Clara dau of Amelia & Joseph was with uncle & aunt age 9 yrs. Did Amelia die with Curtis relatives in Bp Stortford reg district ? I would be grateful of any help to find her death as it might give clues to her birth family

My ancestor according to 1851 census was in Hertford County Gaol in Ware Road St Johns.           Joseph Taylor  Prisoner Married 24 years old Drover born Hitchin (about 1826). How can I find out why he was in prison and how long he was there? His wife Amelia and children were in Hitchin.
I have only discovered this site today so I hope I have typed this correct.  Grateful of any help.           Sumar
