Completed Census Requests / Elizabeth E Tait nee Harrison-completed

I'm having problems in regard to my paternal great- grandparents.
I've found my great-grandmother Elizabeth E Tait [born 1859 in Redmarshall Durham] in the 1901 census living at Stockton on Tees with 4 children [one of which is my grandmother Hilda]. I've confirmed that Elizabeth E Harrison married William Tait in 1896 in Stockton. I've found Elizabeth E Harrison [born circa 1859 in Redmarshall Durham] in the 1861; 1871; and 1881 census records but can't find her in 1891.
Also my great-grandfather William Tait who was either a fireman or a marine engineer or a shipwright doesn't seem to be in either the 1891 or 1901 census. His son, from a previous marriage Charles A Tait appears in the 1891 census but appears to have been in the equivalent of childcare with non related people.
Any help / guidance would be much appreciated.
