I have May ancestors also, including a Margaret, but quite a bit earlier. She married in 1841, and lived in North Co. Dublin near to Skerries.

I would like to look at the tithe records you mention, are they available online? ...
...

yes, on the National Archives website - see :

   http://titheapplotmentbooks.nationalarchives.ie/

did the marriage, or any of their children's baptisms mention the name of a townland ?
(The RC parish contained several civil parishes)

Your dates are well before the start of civil registration, so church records are usually the only option when it comes to searching for specific details like baptisms for individuals. 1823 is doing quite well, as the average starting date for a rural RC parish would be about 1830. Sometimes further family information is available for Landed Gentry etc, i.e. those very well off, and major land owners, etc. but for ordinary people the church records are as far back as you can get with regard to specifics on people.

You can sometimes establish more general information from other resources  e.g. by locating possible connections with people of the same surname and maybe familiar first-names on the same area on the slightly earlier Tithe records.

What are 'sponsors' when seen on records?
..

Sponsors on RC baptism records are the child's Godparents.

....One of the 3 babies Martha Nolan born in 1899 lived until age 4 and I was able to find my gNana Margaret on the 1901 census by using Martha's name.  For what ever reason my gdad Joseph is not listed with them and I cannot find them on the 1911 where my Nana would have been with them....

This one ?

  Nolan household, Stephen Street

born Dublin city ?

I had a quick look earlier, but was searching for Margaret Nolans born in England...

Registration of still births didn't start until much later in the 20th C.

if the above census and baptism are correct and fit with the marriage details for the girls, then there's this possible marriage for the parents on the BMD Index :

  Name : Marcella Murray
  Event Type : Marriage
  Quarter and Year : Apr-Jun 1882
  Registration District : Mullingar
  Volume : 3 / Page : 215

A Joseph Heffernan appears with the same references, so a possible cross-match.

The district is Mullingar, which covers parts Co. Westmeath but not that far from Ballivor Co. Meath where Marcella has listed her place of birth on the 1911 census. For detail of ordering civil certs see :

If that 1911 census entry looks correct, then there is this possible baptism for one of the children, which matches mother's name on the 1911 census, and shows father as Joseph.

Baptism of Kathleen May Heffernan - 26 April 1898

There are also several possible matches for births of the children on the BMD Index, but you would need to order birth certs from the GRO to check parents names etc..

The average starting date for rural RC records would be about 1830, so your dates are probably a little too early for any church record of your Patrick. For searches before the start of civil records the first clues you usually require is a detailed location - i.e. the name of the town, townland or parish your family lived, and also the denomination, so you can start by checking if records are available.

Have you located the sons birth record ?
His place of birth might at least give you a starting point in Ireland...

Most of the Irish BMD records on Ancestry are just Index records, which are also available free on FamilySearch. Definitely a good idea to order the cert from the GRO. The extra details could help your search, not only father's name and occupation, but residences of the bride and groom.

Were the children of Joseph & Margaret all born in Ireland ?
