Have you looked at the original 1798 baptism to see if there is any other useful information included?  It is unlikely but there is always a remote possibility especially if the father was a soldier.  Hythe library have films of the original registers http://www.kent.gov.uk/KCC.Libraries.Web.Sites.Public/LibraryDetails.aspx?aid=0&lid=35&uprn=000050018994

Also, is there any useful information on the original 1825 marriage ie. names of witnesses which could be helpful?

The problem with "Gentleman" is that it was such a loose term in those times.  I, myself, have an ancestor described as such ........... he was a carpenter/undertaker, at some time bankrupt and, as far as I am aware, didn't own any property himself.  I would suggest (assuming Frances is describing her father "correctly") that he may be self sufficient/a trades person/shop keeper or something along those lines (rather than a servant or labourer) as well as what we would today think of as a gentleman.

An additional hurdle may be that the railway came to Margate in the mid 1840s which made it far more accessible hence more movement of the population.

The 1911 led me to this when he is William age 73 and born Benenden with wife Hannah born Dover but, as you say, there was a Stephen so it's quite possible that these may actually refer to the later born Stephen ........... further investigation required :-\ ;D ;D

"We're" not querying them at the moment, you are ;) .  Why do you think Constance is the daughter of the son William and not William and Catherine themselves?

William junior SHOOBRIDGE appears to have been born Benenden 1837/1838 which would be before the marriage of William SHOOBRIDGE and Catherine HART, have you found his baptism yet?  I think he may be otherwise known as Stephen so perhaps William Stephen SHOOBRIDGE or HART?

They are residing at the SER (South Eastern Railway) Crossing at Kenardington in 1881 .............. search for William SHOOBRIDGE age 48 railway porter b.Westwell RG11/943 folio 35 page 6.  They are living with their daughter, Constance (by now the wife of William SAVAGE).

Try contacting Canterbury Library.  They do have some registers on film and fiche but I'm not exactly sure which churches/dates they have.
