Just realized that I had the 1841 Census transcription for Eastbourne, done by the Eastbourne Local History Society.

Unfortunately there is not one single cobby listed.

So I looked at the 1851 census transcription for Eastbourne done by June Barnes  - not 1 single Cobby listed either.

Will have a look in the surrounding districts a bit later

I think they mostly returned to the Hastings area but obviously there are still big blanks. Today in fact I discovered a Robert Cobby buried at Hastings Cemetery in 1859 aged 65. I haven't got a clue who he is or where he fits in(if at all). He didn't show up in the census details you gave me for 1851 in Hastings, so he really is a bit of a mystery - as are so many of the family.
Anyway thanks for your efforts - if you do come across any of them I'd love to know.

All Saints, Hastings.

Memorial No 465 - Head Stone

Beneath this stone lie the mortal rmains of Ebenezer youngest and dearly beloved son of Thomas and Maria Cobby who departed this life on the 10th of November 1857 aged 35 years. This stone is erected by a beloved sister as a small tribute of her affection to his endeared memory (further lines of text)

Hi there again

Sorry, I have found another one next door (my train of thought was interrupted by a couple of Private messages coming through and requiring attention)

Memorial 466 - Headstone

Beneath this stone lie the mortal remains of James Picknell late of HM Customs who departed this life April 13, 1850 aged 45 years.  (eight lines of poetry)

Also Maria wife of Thomas Cobby who departed this life June 28 1854 aged 74 years (lines of text)

Also of Thomas Cobby who departed this life 3rd day of July 1861  (rest of stone unreadable as it has sunk)

So obviously the Picknells and Cobby are related - looks as though the daughter of Thomas & Maria buried her Husband James Picknell as well as her brother Ebenezer and her mum and dad.

Sarah Cobby   St Mary in C   7th Sept 1819   Aged 66 years
Edwin Cobby   St Clements   23rd Sept 1829   Aged 6 years
Hannah Cobby   All Saints                   4th Jan 1840   Aged 39 years
Winifred Cobby   All Saints                   17th May 1843        Aged 77 years
Susannah Cecilia Cobby   All Saints   29 Mar 1851   Aged 72 years

James Picknell of St Clements Parish was buried 19th April 1850
