How does someone in Australia best obtain copies of the following:

George Williams's birth and death records.

born 1799, Dunbar Parish, East Lothian, Scotland

died 14th May, 1875, Stockbridge, Edinburgh, Midlothian

I do not have a valid credit card that is accepted.

Hi Tigerbelle!  I have a few credits up with ScotlandsPeople so checked some details for you.

There was no birth in 1799, only birth on 6/5/1801 to James Williams and Janet Strachan in Parish of Montrose.  I could not look at it as there was no image available, only by order.

However, I checked for the death you mentioned and located:
GEORGE WILLIAMS, (77), died 14 MARCH 1875, Army pensioner, widower of Annie Dalinage (looks like but could be Dulinage).  He was living at 11 Henderson Row, Edinburgh and died of Bronchitis and Old Age Debility.  The informant was CATHERINE JANE MATHEWS, daughter, and the Doctor was David Gordon.

I looked for a marriage but nothing came up in Scotland.

I can send you a copy but it is only in small writing and perhaps a bit hard to read.  The information is there but you may like to have a certificate.  Let me know.    Marie in Sydney

Tigerbelle!   I have also checked the 1861 Census (couldn't resist).  George (61) Head, Night Watchman, born Harrington, Dunbar and wife Ann (60), born Limerick, Ireland and daughter Catherine L. (22) born Dublin, Ireland.

They were living in the Buccleich Parish in Edinburgh.  Can also give you copy of this if you wish.
