Chester Castle Prison Records 1851?

In the 1851 Census at Chester Castle Prison there is a ,

William Jones, Prisoner, Unm, 24. Boatman, Lancaster, Manchester.

This could be the William Jones I am looking for.
I do not have any information on his birth or family although I am let to believe that he was born in Manchester.

Would it be possible to find his record of conviction in Chester in 1850/51 from any archive in Chester or elsewhere?
