I wonder if someone is able to inform me which boarding school a 12 year old boy might be attending in St Saviour, Jersey in 1851?

Possibly Highland Boarding School, St Saviours Main Road.

Census says 'Sion House' - would that have been a boarding school?

Really don't know - it was the only one I could find.  If it shows lots of pupils as boarders then it's reasonable to think it may have been a boarding school.

If you google it it comes up with an 1841 census entry for Sion House Academy - schoolmaster Elias Neel etc.  I am sure the local archives office will be able to help you.
