The URL for EBS is now http://www.ebsglobal.net/ and the "Cheese making" page seems to have been deleted
(possibly a student project ?)

Try searching for "scotland cheese making"
Lots of sites, mainly for modern cheese making, but one or two historical items as well.

includes a recipe from "Lady Castlehill's Receipt Book" from 1738
