Adoption information ?

How would I find out about an adoption in the 1890's?It seems that my great grandmother was adopted by a wealthy couple from Hull. Her name was Ellen and I have her maiden name on my grandmothers's birth certificate as being Harling.

Apparently there was no formal adoption process until 1927, alhtough the term adoption was used with reference to what we would now call fostering or guardianship.  It did not entail a legal or formal change of name for the child although they would often be known by the guardian's or foster parent's name.  The chances of finding relevant records are slim.  :(
