I have a great grandmother, Mary Irish, who married Charles E Sims in 1878  & lived in Hemel Hempstead from then.  her father was Charles Irish but I have no details of where he was from.

Bovingdon is a small village to the South West of Hemel Hempstead, so I think that this could well be your couple.

If we take Ireland to be Mary IRISH's birthplace, then this could be her in 1871.

It seems that as Mary consistently gives her birthplace as Ireland, you will need to search Irish records for her birth.  Civil registration only began in Ireland in 1864, so it looks as though the best that you can hope for would be a baptismal record. Without a definite location within Ireland this may be difficult.
