can i just ask whether im right in believing that somtimes middle names were taken from maiden names? or am i wrong? because the Pitts and the Rice seen a bit unusual

and we have James the father Fisherman now transcribed as Steward not Stewart in the 91 Census

   Yes some of my London ones did that in the early 1800's

how could i find out what James wife maiden name was before they married? ..
maybe im asking to much now and being cheeky but thought id ask ..

 Have found the details for Cicely  reg Plymouth 1869 4 qtr
                         VOL 5b page 261.

 Best bet is order certificate as it will give parents details... cannot tie in a marriage at the moment.

There is I think 1 marriage in Plymouth of a James Stewart in the period 1850 thru to 1861

Marriages Mar 1854
Stewart James Plymouth 5b 359
I think the second entry is a duplicate and states
Stewart James Plymouth 5b 389
you would need to send for the certificate and hope it shows wife Elizabeth

 The james Stewart your looking for is my great great granddad .His wife Elizabeth Stewart  madien name was Williams.There son John Henry Williams Stewart was my great grand dad.If you send me your email address i will send all the info i have(I have sent for James and Elizabeth marrige certificate  do you want a copy when it arrives.)

I think I found your James in the 41 census with his parents and they lived, would you believe in Looe Street. Stewart is Transcribed as Steward and the house is a big one as according to the census image "Houses Inhabited" =1 and there are 25 occupants. Including a John and Mary Rice both 70, isnt there a Rice in 1 of your names?
