Can you give us more information on the life of Nicholas Smith?

When was he born?
When/where married?
When did he come to NZ?

I believe that Italian civil records, like many European records, are organised by the town or the provincial archives and usually you can not get a lookup unless you have the exact place of birth (then you should contact that town directly, or get films from the LDS).  When you do write you should write in Italian, as there's no guarantee that anybody there speaks English, and usually include some Euros for their time.

His father was a seaman, do you know his name? If the father turns out to be English he might be on the overseas birth indexes, or his career might be able to be traced.  What was Nicholas' job?

Italy would not be en  route to New Zealand  at all, there would be no need for a ship going to New Zealand to enter the Mediterranean Sea, the Suez Canal hadn't been built then, so I doubt that explanation. With the surname Smith and even if he was born in the UK you will have huge problems anyway. Civil registration didn't begin in England and Wales until 1837 so had he been born in England in 1836 you would not find a birth registration. I am sorry to be so negative, but don't raise your hopes of finding him.
