Do you know if I'd be able to get a copy of William and Jane's marriage certificate from the Glamorgan Records Office?
Hopefully it might have a few more clues on it (such as William's parents names or Jane's Mother's name etc).

It was before registration so it would be parish info.

I only have the index with no other info.  Not sure what the records would have.  Later will look to see if I can locate marriage for Joseph Jones.

As Jane states her birthplace here as Merthyr the only marriage that fits is Merthyr Tydfil

Joseph Jones and Jane Lewis married 6 May 1804, but there needs to be a parish link to the family to confirm this.
