Elizabeth Morrison and Robert Trench married in Leith, Stirlingshire, on 28/06/1861,

can anyone tell me their birthdates and places, and the names of their parents please ?

They had a son, Robert b.1861 and a son William Alexander b. 1869, I have no other

There were rather more possibilites for Elspeth Cook (presuming she was born in Midlothian around the same time)

I think this is the family indexed as French in the 1881 Census, probably a number of early deaths for their children  :

To get you to the next level, this looks a possibility for Robert Snr's death:

1886   TRENCH   ROBERT    52   LEITH SOUTH   EDINBURGH CITY/MIDLOTHIAN   692/02 0633

Robert was pretty consistent with his census ages and also at death, birth c. 1834 (give or take a year or so as always with these things!)

And for wife Elizabeth, similarly consistent with the same birth year c. 1834:

This is the closest entry I can see for Elizabeth in the 1851 census, including an entry for a sister Janet that fits with the Jessie living with Robert and Elizabeth in 1881. Everyone showing as born in Edinburgh apart from James father:
