In Wales census 1881 there is only one George Brooks born Pembrokeshire 1870-80 that I can see

George Brooks b c1870, Penally Lydstep, Pembs.
Adam Brooks b Stackpole Elidor c1834, Ag Lab.
Esther Brooks b Hodgeston, Pembs

Piece 5410, folio 92, p 16

Mary Ann is more problematic - are you sure about the birth year?

1891
George has disapeared!
Adam and Esther now have a daughter Margaret and two grand children.

1901

George is a "servant" - agricultural labourer -  on a farm in Penally

Just for completeness:
1871

Adam 37
Esther 36
Margaret A 7
Elizabeth 5
William 3
George 1

1901 Marriage: Q4 Pembroke district. Vol 11a Page 2090.

If you can get the marriage certificate you'll be able to tie down her age somewhat (she should be indicated as 16 (or minor) if you are correct) and her fathers name.

This should narrow the field!
