Dates in Army Records

Can anyone tell me what the dates in Army records actually refer to?  My grandfather's records list his service in China until 28/7/1903 - but did he leave China on this date or is this when he arrived back in England?  Obviously in those days it would probably have taken around 6 weeks for the journey.

I only know what's in my Dad's WW2 records - I'm sure an expert will add to the post later - but I think it's the date he left China.  Isn't there information about which ship he came home on and the date of embarkation?  That's shown on Dad's records.
