In 1861, Sarah Snell is very kindly living with her parents RG9/1551 folio 9 pg 11 in Grampound
John Williams b. about 1799 in Probus
Ann Williams b. about 1799 in Creed

children showing as being born in Grampound
1841 HO107/147/5 folio 19 pg 11
1851 HO107/1908 folio 357 pg 9
oldest child appears to be Fanny b. about 1822, and there's this possible marriage in Creed 16/3/1822 Anne Drew to John Williams

Looks like Fanny and Sarah were twins, baptisms
Sarah Williams 28/4/1822 dau of John Williams & Ann in Creed
Fanny Williams 28/4/1822 dau of John & Ann
batch no C052751
not ever so long after the marriage
  ::)
Sarah and Fanny are living together in the 1901 census. I've looked through the census entries for Sarah and Samuel is never on land at the time of the census, so your best bet for details of his father would be to get their marriage cert
Samuel Snell and Sarah Williams dec qtr 1853 St Austell vol 5c pg 301

Ann Drew baptised 15/7/1798 dau of William & Ann at Creed
can't spot John Williams' baptism - you could try the online parish clerk

Running into problems with Bessie. There are 2 in Millbrook only a few years apart - birth regs
Bessey Eddey dec qtr 1860 St Germans vol 5c pg 39
Bessey Eddey june qtr 1863 St Germans vol 5c pg 42
From her age in 1881, yours should be the first one. She's on the 1861 census living with a family called Watts RG9/1522 folio 52 pg 9.
In 1871, she's with her married sister Mary Anne Jackson RG10/2228 folio 25 pg 42.
Now the only Mary Ann(e) Edd(e)y from Maker/Millbrook on the 1851 census has parents called James and Mary Ann HO107/1900 folio 5 pg 3. This family are on later census entries, but never with Mary Ann or Bessey.
The only marriage I can see for a George Eddy to Sarah Jane Symons is sept qtr 1878 Helston vol 5c pg 263 - so don't think they can be Bessey's parents.
There is a George Eddy on the 1871 census with a daughter Elizabeth born 1862, but that Elizabeth is born Penryn, not Millbrook as John Snell's wife is. RG10/2296 folio 15 pg 22
