I think this is a possible for Margaret in 1881:

14 Gloucester Road, Elswick
William McCowan, m, 30, Woolwich, Kent -- Railway clerk
Margt. McCowan, f, 27, Scotland

There's a December 1874 marriage date for them on freebmd and a marriage of a Margaret McCowan and George Eltringham in Newcastle, March 1884.  :)

Margaret did marry William McCowan in December in Newcastle 1874

Glad that's sorted. There's a death for a William McCowan in Newcastle, September 1882, aged 32 which, although a year out from the 1881 census, matches up with William.  :)
