Sorry there are quite a number of Thomas Moore's marrying a Mary around the appropriate time (1873-1881) in the Newcastle area.  You will need the birth certificate of one of the sons to discover what her name is.

Even with a name like Alexander it's not straightforward, two to choose from

Alexander Burrell Moore Newcastle T 10b 135 Dec q 1877
or
Alexander Moore Newcastle T 10b 26 June q 1878

Best option is to order the certificate with the proviso that the parents names are Thomas and Mary.

1881 census eldest son is Charles aged 8, only one on free bmd 1871-1874 is Charles Robert Moore  March Qu 1873 Newcastle on Tyne 10b 139

Same way as I did I expect - just entered the son in the search - Alexander, age & Newcastle, no surname - the family came up, address matched, but Mary was quicker at posting  :D :D

Did Mary die in 1835 age 33? If so do we know what of?

Jayne is not in the house on the 1901 census. Is she dead too? :-\

At 16 she coud have been married I suppose.

Mary must have died between birth of Jane 1885 and the 1891 census, I was just giving you a possible death for Mary, perhaps she died in childbirth.  You would need to send for the death certificate to find out cause of death.
