I have the following of three burials at the above church but no dates or ages for the deaths. Can anyone help me please.

"Sacred to the memory of Thomas Thirlwell. Esq. Collector of Inland Revenue in this town, late of London, son of Thomas and Hannah Thirlwell of Thornes Yorkshire who departed this life on the 5th day of August 1849 aged 45 years. deeply regretted by his family and friends."

I wonder why an English collector of taxes would have been working in Ireland ?

Hiya Fizzy,

Thomas was working in the United Kingdom. Ireland and Great Britain were all one between 1801 to 1922.

Unfortunately, Civil registration for deaths wasn't introduced in Ireland until 1864. There should be a burial record available in the records of St. Peter's Church of Ireland in Drogheda (though it won't necessarily tell you very much). However, I can't advise you on how to access those.
