I can give you a big long list ..... but I won't !!   ;)

But can I just ask ..... is that all that was written on the baptism for John ? .... did they miss off the godparents etc ?

My family were illiterate so theres many glaring mistakes in their records and hence all the different spellings of the name !

It was a transcript from the Parish records - some of them are wanting a little - depending on who has done them!! :-\

Usually if there are no GPs it is a sign that the baby was frail and they were in a hurry to baptise him/her and therefore presumably didn't bother - but I have a few that are missing, which don't fit that criteria, as well.  Again not sure - it may be a transcript error.
Probably worth writing to the Jersey Archives and asking if they will give you an accurate transcript of the 'actual entry' from the parish records.  I know the books have been flogged and they don't like having to handle them - but they should be happy enough to do this.  Then at least you know the facts as they presented themselves. 
Perhaps it is worth checking the burials as well - under both surnames!
There is a very, very vague possibility that he could be John Groizard MULES (whatever) but that is not what the transcript says.
