It seems unlikely that they all died.
They could be badly mistranscribed, out of the country or maybe one parent died and the family is split up or appears under an incorrect surname.  Lots of possibilities.....
I think the first thing to do is search later censuses for them.  John Rodda is quite a common name.  From the 1861 census he appears to have been born about 1829 in Crowan.  I think we should confirm his birth year and place of birth from the 1851 census if possible.  What was his father's name?

I think i found John Rodda's DOB as 20 March 1831 - his father was Joseph

Well Phil, I can see John with father Joseph in 1851 and 1841 but I cannot find him after 1861.  Nor can I see a Rose that fits (assuming John died and she remarried).
I think I would investigate the possibility that the family emigrated.

There is a marriage between John Rodda and Harriet Ward in 1861 - He is from Crowan although "a couple of years younger".......could be the same one
