re Georeg Ambrose Pearson i have looked at the BMD and i can't see a birth detah or marriage for a George AMBROSE pearson so unless he was registered with just an inital rather than his full name i think this is his birth:~

Pearson  George     Sheffield  9c 319 Q2 1857

there are some more in Sheffield later than this George and before the 1861 census but they wouldn't have been 4 on the 1861 census and this one would have beeen.

Well his Dad was a brewer so that's quite likely!

there are a lot of possible Georeg Pearson marriages to a MAry Ann and i havent even checked just under Mary but this could be  a possible considering their age at the time of the 1881 census:~
