King/Knight

Can anybody help me?  I am looking for my g.uncle, James Frederick William King, born 1878, Southampton, father George, mother Ellen Jane.  In 1881, age 2, he was living with his aunts and uncles in Southampton - his mother died in April 1881.  In 1891 he had moved to 51 Coolfin Road, Canning Town, West Ham, with George and Mary Ann Knight (uncle and aunt), an interesting fact being that his surname was entered as KNIGHT on the census.  I have found Mary Ann Knight in the 1901 census living at 22 Compton Avenue, East Ham.  Mary's husband was a Ship's Steward and I am going on the assumption that James also became a merchant seaman, like his father and brother (my grandfather), which is probably why I cannot find him on the 1901 census as he was at sea.  The reason I am trying to trace my g.uncle is that I have drawn a blank on my grandfather - apparently he died in Europe (presumably at a port of call) and have so far been unable to find a death certificate.
