1862 cencus look up please

Interesting. There's only three deaths in East Lothian with the beginning Bles* (to pick up on Blest and Blessington). These are Myles, Bridget and a third:

1875 Winifred Blessington (other name: Curran), f, 62, Aberlady, East Lothian, GROS: 702/00 0002

In 1851, there is this family:

At this moment, I'm not sure whether this is a transcription error or the wrong family! I suppose Winifred's death certificate would help you with her parents - perhaps Patrick Blessington and Alice Cremer?

       That is another possible as Winifred is a " Blessington" name cropping up in other generations.
As I am finding out whilst doing this type of research, all sorts of mistakes happen in spellings and transcriptions, especially when the original forms are filled in by people who can't read and write properly.
