If it is William you are after he states he was born in Sourton Devon. There is an OPC for Sourton who has some records.

It may be worth contacting him to see if he can find a baptism for William. He has 3 Ching Baptisms in Sourton. Hope he can help. I notice by the Census Records for Devon your William is married to his first wife by 1841. I don't see the marriage listed on FreeBMD - Looks like it may have been just prior to civil registration dau Mary registered Mar 1838

Thought i would have another go - looking for these siblings young Richard is living with in 1851 and realise the connection seems to be with James 3 doors away from William in 1841 ;)

The household is

some of this may connect - correct names although dates do not agree with census entries, I do note there are no Chings in Highampton in 1841

James 8 Nov 1807
Margaret 13 Aug 1809

and even some earlier possibilities in Woolfardisworthy to James and Ann

John 5 Nov 1802
Charlotte 8 apr 1804

also baptisms Holsworthy to James and Ann

Richard 18 Feb 1820
Mary 8 Jan 1822
Charity 22 Jan 1824
Wilmot 28 Jan 1825


Cancel these last 4 -  there was a James bap Holsworthy 2 Nov 1797 to Richard and Wilmot which as age would be about right may account for these - they are in Ploughill in 1841, possible the father is Richard I found earlier still in Holsworthy.
