The Hessie Irwin married in 1889 would have been named Hessie McLaughlin in 1919.

Hessie, a form of Hester/Esther, was a very common name for girls and Irwin is a common surname in Co, Londonderry so there could easily be several girls with that same name around the same period.
One thing to keep in mind, if the marriage took place in a Catholic church the witnesses were most like Catholic as well.

Doherty is one of the most common surnames in Londonderry/Donegal and Mullan isn't far behind. You need to start searching for the families in 1911 and 1901 census records, getting birth certificates, etc.
The 1911 census, and then 1901, will eventually be online at National Archives, Dublin website.
