What did a 'Wine Cellarman' do?

My Great-Great Grandfather was a Wine Cellarman in Shoreditch and London's Strand.

What exactly did a Wine Cellarman do?  ???
Welsh - London/Monmouthshire/Wiltshire

Look after the bottles of wine - checking the corks, turning them - whatever was necessary to do.
I suppose he would also send up bottles as they were ordered or, if a wholesale outlet, prepare the outgoing orders. 8)

What was the social standing of a Wine Cellarman working in Shoreditch and The Strand?
Was it a manual job, poorly paid, and not thought of too highly, or was it fairly specialised and ranked quite highly amongst the pub industry?

Any info would be great, because I haven't got a clue !

It would be a relatively skilled labourer's job but would require literacy and numeracy.

My great grandfather was a wine cellarman in South London (Frederick Pullen in case it was the same person!)

My grandmother tells me he cleaned vats in the pubic houses which would've stored wine.

He used to come home, she tells me, stinking of wine - yet he never drank a drop himself.

My great grandfather was not a skilled worker nor did he live in accommodation considered to be good.
