Still think it's Cairncastle (with an i)- if you work from the right side of the placename and cover up the 'castle' at the end, then the 'n' ou are left with 'Cair'.
Away sorting out DNA matches... I may be gone for some time many years!

Search 'Dempsey'  and '1851'

You will find Eliza Dempseys in Carncastle along with a good few others.
