Civil registration of non-Catholic marriages in all of Ireland began in 1845 (from 1864 for Catholic marriages) and on those certificates there is space for father's name and occupation.
Before 1845 (or 1864) church records vary greatly but most pre-registration church records don't seem to record much detail (often just date and name of bride and groom- sometimes townland or names of 2 witnesses).
Away sorting out DNA matches... I may be gone for some time many years!

You will see Thomas Simmington and his age given.

As aghadowey said most parish records from before 1860's wont list parents names.
