I must commend you all on the details you have turned up.   If you find a Mary Balsome born 1895 at Launceston, Cornwall / Devon to Mary and Christian Balsome I'd love to hear about.   Married George Harvie Symonds c 1822 , school master at Perranarworthal, Cornwall.

Sorry, a tad vague.
Mary, husband George Symonds and most of their brood arrived in Australia in 1853, no trouble tracking them forward.  It's just that I am stuck re Mary.   I have info re her from the 1841 and 1851 UK census, but haven't had even a hint on finding a possible birth recording for her.     According to her death cert in Aust. her father was Christian Balsome and her mother Mary Ann unknown.

What was the name of the vessell they came to Australia on please so I can check to see if her maiden name is  mentioned at all.

The family immigrated to Australia on the Stebonheath arriving Jan 1853.   The passenger listing included;
George H Symonds and wife Mary aged 55 and 57 respectively.
Mary A 29      Louisa, 24
Rebecca, 21      Sarah, 19
Charles, 17      Christiana, 15
At their date of immigration, it appears that the following remained in Cornwell,
George, engineer app.      Walter, tin mining   Eliza (beth?) married?

According to Mary's death registration (1862 Victoria Aust) her maiden name was Balsome and her father's first name was Christian and her mother was Mary unknown.
It seems that Mary was from Launceston, Devon / Cornwell and for George Harvie Symonds I have located parents (Walter Symons and Mary Harvie)and paternal grandparents (Walter Symonds and Mary Fowell) in / around Stoke Damerel, Devon.
I just haven't had much joy in finding references to Mary Balsom other than the 1841 and 1851 UK Census's. 
I'm flexiable with the varients in spelling of both Balsom and Symons, I have noted that it chops and changes back and forth, with an 'E' or with a 'D' .

I am concerned about father Christian. Christian is not a male name around Cornwall and Devon. It is a female name. ( this name is pronounced Christeeayne not pronounced anything like the male name Christian that we know) :-\

I really find it hard to see parents being Christian and Mary as both are female names. (as far as a male name - Christopher perhaps, or I have seen Henry transcribed as Mary in the past - Christian and Mary just does not true to me.  :-\ )

Note a daughter Christiana born to George and Mary.

Do you have the death certificate?

As Daizi has said Mary lists Newton Abbot as her POB in 1851 and there certainly were Balsom's there.
