Whites of Wexford Hotel - Hugh McCarthy

I have just read on the Whites of Wexford hotel website that a chap by the name of Hugh McCarthy was the proprieter of this hotel in 1907. I can't find him or his family on the 1911 census.
I've been trying to look up this family as I believe they may have a connection to my 'Cardiff/Leary family.
My G grandmother Johanna Cardiff married James Leary, they had 2 children Kathleen and my grandmother Anastasia born 1909. By 1920 Johanna was remarried and living in Dublin. According to the family Anastasia did not move to Dublin until the 1930's when she married my Grandfather but lived in a hotel with some relatives in Wexford.
I can't find a birth for a Hugh McCarthy but noted that his son was called Eugene. I can find a Eugene who appears to have married a Lizzie Cardiff who are about the right age. Would anyone know if this was the family that owned the hotel?

Mc names like McCarthy should also be searched without 'mc' such as 'carthy.'
Away sorting out DNA matches... I may be gone for some time many years!
